Homemade Granola

My usual weekday brekkie is homemade granola with some Greek yoghurt. I love it because at 5:30am I want something that’s quick, light and easy.

I’m not a big fan of dried fruit so I don’t include any but you could add some if you like.

Ingredients

  • 3 cups rolled oats (not instant or quick oats)
  • 1-2 cups chopped nuts (my current mix is pecans and almonds but choose your favourites)
  • 2-3 tbsp light brown sugar
  • ½ tsp cinnamon
  • ⅓ cup maple syrup (or honey)
  • 1 tsp vanilla essence
  • ¼ cup coconut oil

How to Make

  • Heat oven to 150℃
  • Mix all the dry ingredients together in a large bowl
  • Add all the wet ingredients
  • Use your hands to mix it all together well
  • Spread an even layer on a baking tray
  • Bake for 15 minutes then stir and bake for a further 5-15 minutes
  • Leave to cool in the tray
  • Store in an airtight container
