Chocolate Brownies

For those days when you just can’t beat the chocolate cravings, our two favourite chocolate brownie recipes hit the spot every time.

For instant gratification… microwave chocolate brownies!

You’ll need:

  • 150g butter
  • 150-200g sugar
  • 65g cocoa powder
  • 2 eggs
  • 100g plain flour
  • 1tsp vanilla essence (optional)

How to enjoy:

  • Melt butter in microwave.
  • Add sugar, cocoa and vanilla (if using). Mix well.
  • Add eggs. Mix in gently.
  • Add flour. Mix well.
  • Grease a microwave safe dish.
  • Pour in the brownie mix.
  • Microwave on high for 4-6 mins.
  • Leave to cool for 10 mins (if you can resist that long!)

For those without a microwave or a little more time – baked chocolate brownies!

You’ll need:

  • 200g butter
  • 200-250g sugar
  • 45g cocoa powder
  • 3 eggs
  • 75g plain flour
  • 2tsp vanilla essence
  • 120g chopped nuts or chocolate chips (optional)

How to enjoy:

  • Preheat oven to 180C.
  • Beat eggs & vanilla together. Set aside.
  • Melt butter.
  • Whisk in cocoa.
  • Add sugar. Mix well.
  • Add beaten eggs & vanilla. Mix well.
  • Add flour. Mix well.
  • Fold in nuts or chocolate chips if using.
  • Line a baking dish with foil & lightly grease.
  • Pour brownie mix into baking dish.
  • Bake for 20-25 mins.
  • Leave to cool for 5 mins (just enough time to make a coffee!).
